                                 Vegetable Upma

INGREDIENTS-

(Serves 2 to 3 people)

1 cup Suji (semolina)

1 Bowl mixed vegetables carrots, peas, beans (optional)

1 teaspoon Rai (Black Mustard Seeds)

5-6 kadi patta leaves (Curry leaves)

1 ½ tablespoon Olive oil

1 teaspoon Red chili powder

1 teaspoon Turmeric powder (optional)

Salt to taste

Water

Method-

In a pan heat olive oil and put Rai (Black Mustard Seeds) in it. Let it crackle a little and then add Kadi patta (curry leaves) followed by the bowl of mixed vegetables. Sauté them for 3-4 mins till they get soft. To this add 1 cup Suji (semolina). Use the same cup used for measuring Suji (semolina) to add 2 measures of water. Add the red chili powder, turmeric powder and salt and stir the mixture. Continue stirring till it starts bubbling and develops a thick paste like consistency. Serve hot.
